Diabetes Friendly Side Dish Recipe - Roasted Asparagus

Ingredients:

  • 1 tablespoon shredded Parmesan cheese
  • 1 pound fresh asparagus
  • 1 tablespoon olive oil
  • 1 tablespoon sesame seeds, toasted

Directions:

  1. Preheat oven to 425 degrees F.
  2. Snap off tough ends of asparagus.
  3. Cook in boiling water about five minutes, then drain.
  4. Spread asparagus in a single layer on small roasting pan or cookie sheet.
  5. Brush with olive oil; sprinkle with sesame seeds.
  6. Cook 10 minutes, turning once.
  7. Put hot asparagus on a platter.
  8. Sprinkle with cheese.
