Diabetes Friendly Side Dish Recipe - Roasted Asparagus
Ingredients:
- 1 tablespoon shredded Parmesan cheese
- 1 pound fresh asparagus
- 1 tablespoon olive oil
- 1 tablespoon sesame seeds, toasted
Directions:
- Preheat oven to 425 degrees F.
- Snap off tough ends of asparagus.
- Cook in boiling water about five minutes, then drain.
- Spread asparagus in a single layer on small roasting pan or cookie sheet.
- Brush with olive oil; sprinkle with sesame seeds.
- Cook 10 minutes, turning once.
- Put hot asparagus on a platter.
- Sprinkle with cheese.
