Diabetes Friendly Dessert Recipe - Almond Sugar Cookies
Ingredients:
- 5 tablespoons margarine
- 1 and 1/2 tablespoons of sugar
- 1 tablespoon egg white
- 1/4 teaspoon almond extract
- 1 cup unbleached all-purpose flour
- 1/8 teaspoon baking soda
- Pinch of cream of tartar
- 30 almond slices
Directions:
- Preheat oven to 350 degrees F.
- Cream margarine and sugar, beating until fluffy. Stir in egg white and almond extract.
- Gradually stir in flour, baking soda, and cream of tartar. Shape into 1/2 inch balls.
- Arrange on a non-stick cookie sheet at least two inches apart. Top each cookie with an almond slice.
- Bake for 8-10 minutes until lightly browned. Cool for three minutes, then use a metal spatula to move cookies to wire racks to cool.
