Diabetes Friendly Dessert Recipe - Almond Sugar Cookies

Ingredients:

  • 5 tablespoons margarine
  • 1 and 1/2 tablespoons of sugar
  • 1 tablespoon egg white
  • 1/4 teaspoon almond extract
  • 1 cup unbleached all-purpose flour
  • 1/8 teaspoon baking soda
  • Pinch of cream of tartar
  • 30 almond slices

Directions:

  1. Preheat oven to 350 degrees F.
  2. Cream margarine and sugar, beating until fluffy. Stir in egg white and almond extract.
  3. Gradually stir in flour, baking soda, and cream of tartar. Shape into 1/2 inch balls.
  4. Arrange on a non-stick cookie sheet at least two inches apart. Top each cookie with an almond slice.
  5. Bake for 8-10 minutes until lightly browned. Cool for three minutes, then use a metal spatula to move cookies to wire racks to cool.
