Diabetes Friendly Dessert Recipe - Chocolate Mayonnaise Cake
Ingredients:
- 1 cup light mayonnaise
- 1 cup Splenda
- 1 cup water, room temperature
- 4 tablespoons cocoa
- 2 teaspoons baking soda
- 2 cups plain flour (enriched, unbleached flour)
- 1 teaspoon vanilla
- Glaze: 1/4 cup chocolate ready-to-eat frosting or sugar-free chocolate syrup
Directions:
- Preheat oven to 350 degrees F.
- Combine all ingredients in the order listed above.
- Mix for two minutes or until well blended.
- Pour in 9 x 13 baking pan.
- Bake at 350 degrees F for 20 minutes.
- Remove cake from oven and quickly make multiple holes in it with a toothpick.
- Spread frosting or chocolate syrup over the cake for additional moisture and flavor.
