Diabetes Friendly Dessert Recipe - Chocolate Mayonnaise Cake

Ingredients:

  • 1 cup light mayonnaise
  • 1 cup Splenda
  • 1 cup water, room temperature
  • 4 tablespoons cocoa
  • 2 teaspoons baking soda
  • 2 cups plain flour (enriched, unbleached flour)
  • 1 teaspoon vanilla
  • Glaze: 1/4 cup chocolate ready-to-eat frosting or sugar-free chocolate syrup

Directions:

  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients in the order listed above.
  3. Mix for two minutes or until well blended.
  4. Pour in 9 x 13 baking pan.
  5. Bake at 350 degrees F for 20 minutes.
  6. Remove cake from oven and quickly make multiple holes in it with a toothpick.
  7. Spread frosting or chocolate syrup over the cake for additional moisture and flavor.
