Diabetes Friendly Dessert Recipe - Sweet Ginger Cookies
Ingredients:
- 1/2 cup fruit sweetener
- 1/2 cup butter (softened)
- 1 egg
- 1/2 teaspoon vanilla
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 2 teaspoons ground ginger
- 1/2 cup chopped walnuts (optional)
Directions:
- Preheat oven to 350 degrees F.
- In a large bowl, cream together first four ingredients. Beat for three minutes.
- Combine dry ingredients in another bowl and add slowly to creamed mixture, continuing to beat. Stir in nuts.
- Coat baking sheet with non-stick spray and drop cookies by teaspoonfuls about two inches apart.
- Bake at 350 degrees F for 8-10 minutes.
- Remove from sheet with metal spatula and cool on a wire rack.
