Diabetes Friendly Dessert Recipe - Sweet Ginger Cookies

Ingredients:

  • 1/2 cup fruit sweetener
  • 1/2 cup butter (softened)
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 teaspoons ground ginger
  • 1/2 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, cream together first four ingredients. Beat for three minutes.
  3. Combine dry ingredients in another bowl and add slowly to creamed mixture, continuing to beat. Stir in nuts.
  4. Coat baking sheet with non-stick spray and drop cookies by teaspoonfuls about two inches apart.
  5. Bake at 350 degrees F for 8-10 minutes.
  6. Remove from sheet with metal spatula and cool on a wire rack.
